Our Atlas holds it as a gluten-free option, but the reading is stronger than that: its own site brands it “Artesanos Sin Gluten” with active Wed–Sat hours, and an independent blog describes it as entirely gluten-free (read September 2026). We mirror the Atlas tier and flag it for a dedicated re-read; we never upgrade a tier ourselves.
