The short answer

Freiburg’s Christmas market spreads over the squares and lanes of the Altstadt, with more than 140 stalls. At the stalls, the reliable things are the whole ones: roasted chestnuts, the Glühwein in your mug, coffee or a pure tea. Most of the baked, battered and dough-based food is wheat. The real win in Freiburg isn’t a stall. It’s a döner shop that describes itself as 100% gluten-free, a deli whose own shop board says 100% gluten-free products, and a good list of places with gluten-free options. The Black Forest’s entirely gluten-free Christmas market, in Sasbachwalden, makes a day trip from here.

This season’s market

The Freiburger Weihnachtsmarkt runs from Thursday 19 November to Wednesday 23 December 2026. Opening hours, as the organiser prints them: Monday to Saturday 10:00 to 20:30, Sundays 11:30 to 19:30. On the first day it opens at 14:00, and on 23 December it closes at 19:30. The market is closed on Sunday 22 November (Totensonntag). Official page: weihnachtsmarkt.freiburg.de.

The organiser, Freiburg Wirtschaft Touristik und Messe (FWTM), counts over 140 stalls, spread across the Rathausplatz, Kartoffelmarkt, Unterlindenplatz, Franziskanerstraße, Turmstraße, Predigertor, Rotteckring and the Colombipark. It’s a mixed market, not a gluten-free one, so treat it the way the hub describes: asking what’s in the food, and what else touches it, is your right.


What’s likely gluten-free at the stalls, and what isn’t

Same tiers as anywhere, and no stall named. Roasted chestnuts, Glühwein, coffee and pure teas are gluten-free by their nature, handling permitting. Roasted almonds are ask-first: is anything dusted on after roasting, and are they sitting open beside the Lebkuchen? Crêpes and waffles need their own labelled gluten-free flour and a clean iron or pan, and most of what’s on a stall counter isn’t made that way. Flammkuchen and Schupfnudeln, if you see them, are usually made with wheat dough.

A plain grilled sausage taken off its roll is the reasonable savoury order. German trade guidelines define grill sausages like the Baden and Swabian Rote Wurst by their meat and fat, with no cereal in the definition. That doesn’t stop a maker adding a labelled binder, and gluten can come in through a spice mix, so ask what’s in the sausage and the marinade, ask what else goes on the grill, and have it without the roll.

Freiburg’s own sausage, the Lange Rote, is a long, thin grilled pork sausage about three times the length of its bun, traditionally served with fried onions. Its home is the Münstermarkt, held six days a week on the cathedral square. The same questions apply: the sausage, the grill, and no bun.

Where to eat gluten-free in Freiburg

This is Freiburg’s strength. Except where a place is marked dedicated, always tell them you have coeliac disease and confirm how they handle it on the day.

★ Dedicated gluten-free

  • M&K Döner, döner shop, Hans-Bunte-Straße 16, 79108 Freiburg. Its own profile describes it as a 100% gluten-free döner.
  • Feinkost Galerie Heldt, deli and bakery shop, Fischerau 8, 79098 Freiburg (Altstadt). When we visited in November 2025, the board outside the shop read “hier bei uns 100 % glutenfreie Produkte”: rolls, sweet bakes and pralines. The company also runs a second shop, Honig-Galerie Heldt at Münsterplatz 28. That one isn’t the dedicated shop, so head to Fischerau 8.

  • Café TILIA, café. We had gluten-free waffles here in November 2025. It’s a gluten-free option, not a dedicated kitchen.
  • La Parisienne Macaronnerie, macaron shop. We ate here in November 2025. Not a dedicated gluten-free shop, so ask about handling for anything you order.

By its legal definition, Glühwein is made only from wine, flavoured with spices and sweetened, with no gluten-containing ingredient. Ask about a ready spice or punch mix. Allergens have to be declared even though the drink carries no ingredient list.
