Gluten-free at Braunschweig Christmas market: where to eat

The short answer

Braunschweig’s Christmas market gathers around the cathedral, Dom St. Blasii, in the old town. At the stalls, the reliable things are the whole ones: roasted chestnuts, the drink in your mug, and a plain grilled sausage taken off its roll (ask first). Most of the baked and battered rest is wheat. One local special to skip unless proven otherwise: anything made with Mumme, the city’s historic malt drink.

Away from the stalls, Braunschweig has a café-restaurant in the Magniviertel whose own site lists a gluten-free Sunday breakfast, and an organic shop with its own gluten-free bakery. The city also makes a comfortable base for a day trip to Goslar.

This season’s market

The Braunschweiger Weihnachtsmarkt runs from Wednesday 25 November to Tuesday 29 December 2026, around the Dom St. Blasii and on the Platz der Deutschen Einheit. Opening hours, as the organiser prints them: Monday to Saturday 10am to 9pm, Sundays and public holidays 11am to 9pm. On the opening day the market is opened at 5.45pm and trades from 6pm to 9pm; on 29 December it closes at 8pm; it is closed on 24 and 25 December. The organiser counts around 140 stalls. It’s a mixed market, not a gluten-free one, so treat it the way the hub describes: a market stall is a food business, and asking what’s in the food, and what else touches it, is your right.


What’s likely gluten-free at the stalls, and what isn’t

The same tiers as anywhere, and no stall is named. The grill sausage is, by the German trade definitions, meat, fat and spices with no cereal in the recipe. That doesn’t stop a maker adding a labelled binder, gluten can come in through a spice or marinade, and the gluten you can actually see is the roll and the shared grill. So ask what’s in the sausage and the marinade, ask what else is on the grill, and have it on a plate without the roll.

Reibekuchen and Kartoffelpuffer are usually bound with flour: ask about the binder and the fryer. Crêpes, waffles, Flammkuchen, Schmalzgebäck, Lebkuchen and Stollen are wheat. Roasted chestnuts, Glühwein, coffee and pure teas are reliably gluten-free by their nature, handling permitting. Gebrannte Mandeln, chips (Pommes) and Currywurst sauce are ask-first.

Two local notes. The organiser lists Braunkohl (the local name for kale) among the regional specials: the kale is naturally gluten-free, but ask about the sausage served with it. It also lists a Mumme-Glühwein. Mumme was brewed from barley, hops and wheat and has long been sold as a malt drink, and malt drinks contain gluten. Treat anything with Mumme in it as containing gluten unless the stall shows you otherwise. The same goes for Malzbier; for a Kinderpunsch, ask what the base is.

Where to eat gluten-free in Braunschweig
