Gluten-Free Canary Islands

The Canaries eat like the rest of Spain, on ground that already leans your way: papas arrugadas with mojo, fresh-caught fish and grilled meats are naturally gluten-free when a kitchen keeps them clear of thickeners and a shared fryer. The one trap on every island is gofio — the local toasted flour, traditionally milled from wheat — so always ask which grain is in it.

Fuerteventura carries no dedicated gluten-free kitchen we can confirm to our standard — even its most consistently named 100% gluten-free spot, Sanus in Corralejo, has evidence we can’t yet reconcile, so it sits here as a gluten-free-serving option, not a ★. La Palma, La Gomera & El Hierro

We don’t yet hold a single gluten-free venue on La Palma, La Gomera or El Hierro that a person at How to Gluten Free has checked — so, honestly, we won’t name one. That’s the whole rule behind this guide: if a place isn’t on our checked list, we don’t put it in front of you. It doesn’t mean you can’t eat well there. The naturally gluten-free base of Canarian cooking travels to every island — papas arrugadas with mojo, grilled fresh fish and meats, and plain rice — as long as you keep them clear of thickeners and a shared fryer. On these three, lead with those dishes, carry your own bread from a mainland or big-island bakery, and use the Spanish sentence below at every table. When we check a venue on one of them, it will appear here.

Getting around the islands

  • Between islands — inter-island ferries (Fred. Olsen, Naviera Armas) and short flights (Binter, CanaryFly) connect the archipelago. Gaps between meals get long, so carry your own gluten-free snacks for the crossing.
  • On Fuerteventura — the north (Corralejo, El Cotillo), the east coast (Caleta de Fuste, the capital Puerto del Rosario) and the southern Jandía peninsula (Costa Calma, Morro Jable) are each an hour or more apart. Base yourself where you’ll spend most days, and pin the places above before you go.
  • The reliable model — a room with a fridge or kitchenette, plus one gluten-free-serving restaurant from this guide pinned per town. On the islands without checked venues, self-catering is the calm option.

The gofio trap

Gofio — the Canaries’ signature toasted flour — is stirred into soups, sauces and desserts across all the islands. It’s traditionally milled from wheat (sometimes maize, which is different), so it is never a given. Ask which grain is in the gofio before you eat anything that contains it.

The one sentence to say

Say it before ordering, every time — every place in this guide also cooks with wheat.

Three more worth asking: ¿Tienen un menú sin gluten? — “Do you have a gluten-free menu?”; Para los fritos, ¿tienen una freidora dedicada al sin gluten? — “For fried food, is there a dedicated gluten-free fryer?”; and ¿El gofio de aquí lleva gluten? — “Does the gofio here contain gluten?”

Good to know

  • “Sin gluten” means ≤ 20 mg/kg (20 ppm) — the EU and Codex threshold. A label that says it, means it.
  • No dedicated kitchen on Fuerteventura that we can confirm yet — so treat every place here as a mixed kitchen with a gluten-free line, and let the sentence and the fryer question do the work.
  • Stays — we don’t hold a hotel on these islands that a person has checked to our standard, so we won’t name one; confirm the gluten-free breakfast in writing when you book, and ask again at check-in.
