Potato Flour vs Potato Starch
The short answer: they are not interchangeable. Potato flour is made from whole cooked, dried potatoes β heavy, thirsty, and unmistakably potato-flavoured. Potato starch is the pure extracted starch β feather-light, flavour-neutral, and one of the best lift-and-softness tools in gluten-free baking. Swap one for the other 1:1 and the recipe fails in opposite directions.

Which should I use?
- Baking a GF flour blend that needs lift and tenderness β potato starch. It is the “lightness 5/5” member of the pantry.
- Bread or rolls drying out too fast β a spoonful or two of potato flour. It holds water for days β our pillow-soft potato rolls are the proof.
- Thickening a sauce, soup or fruit filling β potato starch, added near the end; it thickens fast, turns glossy, and doesn’t taste of anything.
- The bag just says “potato” in another language β treat it as unknown and check: Kartoffelmehl/fΓ©cule/fecola labelling is inconsistent across Europe β the ingredient list settles it.
The swap rule
There isn’t one β that’s the point of this page. If a recipe says potato starch and you only have potato flour, reach for cornstarch or tapioca starch instead; they’re the honest substitutes. If a recipe says potato flour and you have none, extra starch will not save the moisture β a mashed potato or psyllium does that job better.
