Note the two most common mix-ups. Potato starch is not potato flour — starch is light and powdery, flour is dense and absorbent, and they are not interchangeable. And xanthan gum and psyllium are not the same: xanthan tightens a crumb, psyllium adds stretch and holds water, especially in bread. Swapping one for the other without adjusting the recipe changes the texture.
How to build (or choose) a blend
If you are starting out, buy one reliable gluten-free 1:1 (cup-for-cup) blend and get to know it. These are genuinely useful for cakes, cookies and quick bakes.
