Any recipe can come to your table. This is the swap sheet: what replaces what, when it works 1:1, and where technique has to change. Print it, stick it inside a cupboard door, cook everything again.

The five rules of GF adaptation
- Swap the ingredient, keep the technique β except bread, where the technique changes too.
- Moisture is your friend. GF flours drink more; when in doubt, add an egg or a splash of milk.
- Season harder. GF bases are blander carriers β compensate on purpose.
- Separate water, separate oil. The recipe converts perfectly and the shared fryer still ruins it.
- Check the label on every batch β recipes change hands; products change recipes.
