Bologna Β· gluten-free pizza

In Bologna you can eat gluten-free pizza at 2 places we rate as dedicated gluten-free kitchens (β˜…): a trattoria-pizzeria in the Bolognina and a gluten-free lab with pizza to take away. Another 4 pizzerias also work with wheat and describe their gluten-free pizza on their own websites (◐); one of them says it is baked in its own oven. A further 2 are listed by a directory or an online map listing, and we haven’t checked them yet.

How gluten-free pizza works in Bologna

Bologna has two kinds of place for gluten-free pizza. In a dedicated kitchen the whole menu is gluten-free: a trattoria-pizzeria with a single kitchen, and a lab that makes pizza, bread and fresh pasta to take away. In a mixed pizzeria the gluten-free dough sits next to the wheat dough, and what matters is how they keep the two apart: one has a dedicated oven, one a separate area to prepare it, and several are in the network of AIC, the Italian coeliac association.

Watch the special doughs. Kamut is a wheat, wholemeal dough is wheat too, and a β€œsenza frumento” (wheat-free) dough is not the same as gluten-free: where a pizzeria makes several doughs, always ask for the gluten-free one and how it is baked.

When you book or order, ask three things. Does the gluten-free pizza have its own oven, or how is it baked? What is the dough made from? Do fried things go through a fryer used only for gluten-free? And say you have coeliac disease, not just that you avoid gluten.

Questions

Is gluten-free pizza in Bologna safe for coeliacs?

It depends on the kitchen, not the city. We rate the 2 β˜… places as dedicated gluten-free kitchens, and each card quotes what the place says itself. In a mixed pizzeria what counts is the oven, the dough and the fryer: Casa Altabella says its gluten-free pizza is baked in a dedicated oven. Always say you have coeliac disease and ask how your pizza is baked.

Where can I eat pizza in Bologna from a fully gluten-free kitchen?

At Trattoria Vecchio Mercato on Via Gobetti in the Bolognina, which says it has one kitchen and it is exclusively gluten-free, and, to take away, at La Spiga Amica on Via Petrarca.

Is a kamut or wholemeal pizza gluten-free?

No. Kamut is a wheat and wholemeal dough is wheat. Ristorante Pizzeria Due Lune, for example, makes traditional, wholemeal and Kamut doughs next to its gluten-free options: ask for the gluten-free dough and how it is baked.

Can I pay for pizza with the Italian coeliac food vouchers?

At La Spiga Amica, if you live in Italy and hold the vouchers (buoni celiachia): it says its products can be bought with the vouchers of the ASL of Emilia-Romagna and Lombardy. The pizzerias on this page don’t mention them on their sites, so ask.
