Gluten-free pizza in Milan: 11 places, 3 dedicated

Milan Β· gluten-free pizza
In Milan you can eat gluten-free pizza at 3 places we rate as dedicated gluten-free kitchens (β ): a pizza-and-burger bistrot, a Pisan chickpea counter that also sells pizza by the quarter, and a gluten-free shop with pizza to take away. Another 8 pizzerias also work with wheat and describe their gluten-free pizza on their own websites (β); 3 of them say it is baked in its own oven. A further 7 are listed by a directory or an online map listing, and we haven’t checked them yet.
How gluten-free pizza works in Milan
Milan has two kinds of place for gluten-free pizza. In a dedicated kitchen everything is gluten-free: the dough, the oven, the fryer and the counter. In a mixed pizzeria the gluten-free dough sits next to the standard one, and what matters is how they keep the two apart: some run a second kitchen with its own oven and team, some bake the gluten-free base in a small pan to keep it away from the flour, and some have trained with AIC, the Italian coeliac association.
When you book or order, ask three things. Does the gluten-free pizza have its own oven, or how is it baked? What is the dough made from? (A βsenza frumentoβ, wheat-free, dough is not the same as gluten-free, and kamut is a wheat.) Do fried things, from montanara to chips, go through a fryer used only for gluten-free? And say you have coeliac disease, not just that you avoid gluten.

Questions
Is gluten-free pizza in Milan safe for coeliacs?
It depends on the kitchen, not the city. We rate the 3 β places as dedicated gluten-free kitchens, and each card quotes what the place says itself. In a mixed pizzeria what counts is the oven, the dough and the fryer: Mama Eat, Γ Peperino and Be Bop each say the gluten-free pizza has its own oven. Always say you have coeliac disease and ask how your pizza is baked.
Where can I eat pizza in Milan from a fully gluten-free kitchen?
At My Heart 3 in Via Pavia (pizza, calzoni and burgers), at Doratina in Via Malpighi (pizza by the quarter and cecina) and, to take away, at La Spiga Amica in Via Caravaggio. At Doratina, ask about the desserts and the beer.
Is a βsenza frumentoβ or kamut pizza gluten-free?
No. Kamut is a wheat. A βsenza frumentoβ (wheat-free) dough can be made from gluten-free flours and still be prepared next to wheat: one Milan pizza chain says on its own site that its wheat-free dough is not suitable for coeliacs. Ask for βsenza glutineβ and how it is made.
Can I eat the fried starters at a pizzeria?
Only if they go through a fryer used just for gluten-free. à Peperino says it keeps a fryer for gluten-free, and Mama Eat runs a separate gluten-free kitchen. Elsewhere, ask before you order montanara, crocchè or chips.
