Is arborio rice gluten-free? Yes, check the risotto
Yes. Arborio rice is gluten-free, and so are carnaroli and vialone nano, the other risotto rices.
What to check in a risotto
- The stock: stock cubes and granules can contain wheat.
- Additions: some recipes stir in flour or a roux, or finish with a breadcrumb topping.
- Restaurants: risotto is often started in batches. Ask what went into the base and whether a clean pan is used.
