Milan Β· gluten-free bakeries

In Milan you’ll find 7 pasticcerie and bakeries we rate as dedicated gluten-free kitchens (β˜…), from breakfast cornetti to bread, cakes to order and pizza, and another 2 shops that also use wheat and sell some gluten-free bakes (◐). A further 3 are listed by a directory or an online map listing, and we haven’t checked them yet.

How gluten-free bakeries work in Milan

Milan has many entirely gluten-free pasticcerie and bakeries: there you choose from the counter like anyone else, from the cornetto to the cake. In mixed shops, gluten-free is one part of the range, and what matters is where it is made, how it is stored and which tongs serve it.

Some gluten-free products are made with deglutinated wheat starch (amido di frumento deglutinato): wheat starch with almost all of the gluten removed, which EU law (Regulation 828/2014) allows in gluten-free food as long as the finished food stays under 20 mg/kg. A few coeliacs prefer to avoid it, and some bakeries say they never use it.

At the counter, ask three things. Is everything here gluten-free, or only some items? Is it made here, in your own lab, or brought in? And in a mixed shop: how do you keep the gluten-free bakes apart, on the counter and when you serve them? If you live in Lombardy, some shops take the coeliac food vouchers (buoni celiachia).

Questions

Are gluten-free bakeries in Milan safe for coeliacs?

It depends on the lab, not the city. We rate the 7 β˜… bakeries and pasticcerie as dedicated gluten-free kitchens, and each card quotes what they say themselves. In a mixed shop, ask where the gluten-free bakes are made and how they are kept apart. Always say you have coeliac disease.

Where can I have a gluten-free breakfast in Milan, cornetto and cappuccino?

At GluFree Bakery on Via Curtatone (croissants and a bar), at PanPerMe on Viale Monte Nero (breakfast, and brunch on Sundays) and at Gli Imperfetti on Viale Gorizia (a bakery with coffee and brunch).

Where can I order a gluten-free cake in Milan?

At Pasticceria Navotti on Via Paisiello, which makes cakes for every occasion, at Pansy on Via Donatello (takeaway and delivery in Milan) and at Via dalla Spiga, which takes cake orders.

What is deglutinated wheat starch?

Wheat starch with almost all of the gluten removed; a food that contains it can be called “gluten-free” if it stays under 20 mg/kg, the EU limit (Regulation 828/2014). It is allowed, but a few coeliacs prefer to avoid it: GluFree Bakery says it uses no deglutinated wheat flour.
