Is kebab gluten-free? Shish can be, doner and wraps usually aren’t
It depends on the kebab. Pitta, wraps and flatbreads are wheat. Some doner meat contains wheat flour or breadcrumbs as a binder. Grilled pieces of meat on a skewer (shish) can be gluten-free.
What to check
- The meat: ask whether the doner or kofte mix contains flour or breadcrumbs.
- Marinades and sauces: some contain soy sauce, beer or flour. Garlic and yoghurt sauces are usually simpler.
- The grill: bread is often warmed on the same grill as the meat.
A good order
Shish meat on a plate with rice or salad, a plain yoghurt sauce, and nothing warmed on the bread grill.
