How to say gluten-free in Italian, plus the phrases for the table
“Gluten-free” in Italian is senza glutine. That’s the word you’ll see on packs and menus. At the table you need a little more: that it’s a medical condition, which grains to avoid, and the kitchen questions. Here they are, in Italian, with the English meaning.

What the staff might answer
- Sì, possiamo prepararlo a parte, con padella e utensili puliti.
Yes, we can prepare it separately, with a clean pan and clean utensils. - Mi dispiace, oggi non possiamo garantirlo.

On labels
In Italy and the rest of the EU, Β«senza glutineΒ» is a regulated claim: 20 mg/kg or less. Β«PuΓ² contenere tracce di glutineΒ» is voluntary and doesn’t cancel a senza glutine claim. Italy’s national association is AIC, and many restaurants know the word celiachia well.
Local things to watch
- Pasta water: never reuse water that has cooked normal pasta, for gnocchi, risotto add-ins, or ‘just a quick dip’.
- Farro and orzo appear in salads and soups; ‘orzo’ also means the barley coffee substitute (caffΓ¨ d’orzo), barley.
- Pizza kitchens are full of airborne flour, a GF pizza needs a separate prep area and oven surface.
- Italy has an excellent network of coeliac-aware restaurants; asking ‘senza glutine per celiaci?’ is normal and understood.
- Gnocchi are usually potato + wheat flour; supplì/arancini and fried antipasti share oil with breaded items.
