Ingredients
  

Batter
  • 100 g buckwheat flour labelled gluten-free
  • 1 large egg
  • 320 ml milk
  • 0.5 tsp salt
  • Butter for cooking
Featured filling: Spinach & Ricotta
  • 250 g frozen whole-leaf spinach thawed and squeezed dry
  • 125 g ricotta
  • 20 g parmesan grated
  • Nutmeg a pinch, optional
  • Salt & pepper to taste

Method
 

  1. Whisk the buckwheat flour, egg, milk and salt into a smooth, thin batter. Rest for 30 minutes if you have time β€” it makes lacier galettes.
  2. Heat a little butter in a non-stick pan over medium-high heat. Pour in a thin ladle of batter and swirl to coat. Cook 1–2 minutes until the edges lift and the underside is golden and crisp.
  3. Warm your filling, spoon it into the centre, then fold the four sides in to frame it. Heat through for a minute and slide out. Repeat with the rest of the batter.
