Gluten-free at the Goslar Christmas market: what a coeliac can actually eat
The short answer
Goslar lights up its UNESCO-listed old town for Advent, and the market’s Weihnachtswald, a small forest of illuminated firs among the huts, is the thing people come for. At the stalls, the reliable things are the whole ones: roasted chestnuts, the drink in your mug, and a plain grilled sausage off its roll once you’ve asked. Most of the baked and battered food is wheat. We don’t have a Goslar kitchen we’ve checked for you yet, so lean on the method, and think about basing yourself in Braunschweig, where our list has dedicated gluten-free places.

This season’s market
The Goslarer Weihnachtsmarkt & Weihnachtswald runs from 25 November to 30 December 2026. Opening hours, as the organiser prints them: Monday to Sunday 11:00 to 20:00, with the Weihnachtswald open until 22:00. On 24 December it’s open 11:00 to 14:00, on 25 and 26 December 12:00 to 19:00, and on the last day, 30 December, 11:00 to 18:00. Official page: meingoslar.de (GOSLAR marketing gmbh).
The organiser counts around 70 wooden huts and around 60 illuminated conifers in the Weihnachtswald. It’s a mixed market, not a gluten-free one, so treat it the way the hub describes: a market stall is a food business, and asking what’s in the food, and what else touches it, is your right.
The stalls here, gluten-free or not
The line-up is classic German Christmas-market food, and it sorts into the hub’s three tiers. No stall is named.
Reliably gluten-free by their nature, handling permitting: roasted chestnuts (Maronen), Glühwein, coffee and pure teas. A plain grilled sausage is meat, fat, salt and spices in the German trade definitions, with no cereal listed. But the roll is wheat, the grill is shared, and a spice mix or marinade can carry gluten. Ask what’s in the sausage and what else is on the grill, and have it on a plate without the roll.
Wheat, as a rule: Kartoffelpuffer (potato pancakes bound with flour), Lebkuchen, Stollen, Schmalzgebäck and Krapfen, Flammkuchen, waffles and crêpes.
Ask first: gebrannte Mandeln are almonds, sugar and cinnamon by recipe, but ask whether anything is dusted on after roasting, and watch for an open display next to the Lebkuchen. With chips and other fried potato, the potato is gluten-free, but the coating, the seasoning and a shared fryer are the risk. For currywurst and other sauces, ask to see the label of the ready product.
On our own Advent visit in December 2023 we had freshly cut potato crisps from a snack stand here. Potato is gluten-free by nature, but we couldn’t confirm the spice blend or whether the fryer was shared, so treat them as ask-first, not a green light.

Where to eat gluten-free in Goslar
We don’t have a dedicated gluten-free kitchen in Goslar on our list, and we haven’t checked a Goslar restaurant ourselves yet. Three places in town are listed with gluten-free options. If you eat in town, tell them you have coeliac disease and ask how they handle it on the day.

Getting there and staying
Goslar sits at the northern edge of the Harz and is on the regional rail network, with trains from Braunschweig and Hannover. It works as a day out from a Braunschweig base, though the old town is lovely after dark. We don’t yet have a gluten-free breakfast we can vouch for at a Goslar stay, so we don’t name one here.
For self-catering, look for a labelled “glutenfrei” range in the larger supermarkets and organic shops, and read the label each time.

Kartoffelpuffer are usually bound with wheat flour, so ask about the binder and the fryer. Gebrannte Mandeln are almonds, sugar and cinnamon by recipe, but ask whether anything is dusted on after roasting, and watch for an open display beside the Lebkuchen.
Is Glühwein at the Goslar market gluten-free?
By its legal definition, Glühwein is wine sweetened and spiced, with no gluten-containing ingredient. Ask only about a ready spice or punch mix. The duty to declare allergens applies even though the drink carries no ingredient list.
