Almond Flour vs Almond Meal
The short answer: same nut, different grind β and this is the one comparison where swapping often works. Almond flour is blanched (skins off) and finely ground: pale, delicate, made for macarons and elegant cakes. Almond meal is ground whole, skins on: darker, coarser, nuttier β made for rustic bakes, crumbles and crusts. Nutrition is nearly identical; texture and looks are the whole story.

Which should I use?
- Macarons, financiers, fine cakes β almond flour only. Meal’s skins and coarse grind sabotage both texture and colour.
- Muffins, quick breads, pancakes β either; meal adds a pleasant rustic note.
- Crumble toppings and tart crusts β almond meal earns its keep; the coarseness is the charm.
- Budget baking β meal is usually cheaper β or pulse whole almonds at home in short bursts (long bursts make almond butter, ask us how we know).
- Deep-frying coatings β meal, seasoned; it browns beautifully.
One label caution
Brands are sloppy with these names β some “almond meal” is blanched, some “almond flour” is coarse. Trust the description (blanched? skins?) and your eyes over the name on the front, and for coeliac households prefer certified packs: nuts are ground on shared lines more often than starches are.
