Is imitation crab gluten-free? Usually not, it often contains wheat
Usually not. Imitation crab (surimi, crab sticks, “seafood sticks”) is white fish paste bound with starch, and many brands use wheat starch or wheat flour.
What to check
- The label: some brands use potato, corn or tapioca starch instead and say so. In the EU and UK, wheat must be highlighted in the ingredients.
- Sushi: California rolls and some other rolls use crab sticks. Ask whether the “crab” is real crab or surimi, and check the soy sauce too.
- Seafood salads and poke bowls often use it as well.
