How a gluten-free döner works
Gluten can be in three parts of a döner: the bread, the meat and the sauces. The fully gluten-free shops on this page name all three; Iconic Döner, for example, says everything is gluten-free, from the bread to the meat to every other ingredient, and that its meat has no binders.
So ask three things when you order. Is the bread gluten-free, and is it warmed apart from wheat bread? Does the meat have binders or seasoning with gluten? Are the sauces gluten-free? Where a shop also sells wheat bread, ask too whether the gluten-free döner is made at a separate counter or in a separate room: Adam’s in Rheine, for example, says it makes its Saturday gluten-free döner in a separate room.
In the EU, “glutenfrei” on food means 20 mg of gluten per kilogram or less (Regulation (EU) No 828/2014). In German, coeliac disease is “Zöliakie”; say it when you order.

How they handle it: It says “Deshalb ist bei uns alles glutenfrei: vom Brot über das Fleisch bis hin zu allen weiteren Zutaten.” (so everything is gluten-free, from the bread to the meat to every other ingredient) and “Gluten kommt bei uns gar nicht erst in die Küche.” (gluten never enters the kitchen). It describes its meat as “ohne Bindemittel und Konservierungsstoffe” (without binders or preservatives).

How they handle it: Its story page says “Deshalb werden ausschließlich glutenfreie Zutaten verwendet” (so only gluten-free ingredients are used). The stand itself: “Aus der Idee wurde ein umgebauter Überseecontainer auf dem Parkplatz des toom Baumarkts in Freiburg.” (a converted shipping container on the car park of the toom DIY shop in Freiburg).
Watch out: Open Tuesday to Saturday, 11am to 7pm (its own hours, read in October 2026).

Serves: Homemade gluten-free döner, dürüm and pizza; it says its meat, sauces and everything that goes into the fryer are naturally gluten-free (“Unser Fleisch, Falafel, Gemüse (Auberginen, Zucchini), Reis, Salate, Soßen, Pommes und alle Produkte, die in die Fritteuse kommen, sind von Natur aus glutenfrei.”).
How they handle it: Its gluten-free page says “Wir verwenden ausschließlich eine glutenfreie Mehlmischung, auch zum Bestäuben unserer glutenhaltigen Teiglinge.” (only a gluten-free flour mix is used, also to dust the dough with gluten) and “Alle Behälter für Salate, Soßen und Zutaten werden streng getrennt gehalten” (all containers for salads, sauces and ingredients are kept strictly apart).
