Gluten-Free Sardinia
Sardinia is friendlier to coeliacs than its wheat-heavy classics suggest. The island has one of the highest rates of coeliac disease anywhere, so awareness runs deep and gluten-free versions of the local dishes are unusually easy to find, with wholly gluten-free kitchens, bakeries and gelaterie in Cagliari, Sassari and Olbia. The one caveat to learn first: the famous flatbread pane carasau, and the island’s semolina pastas, are wheat.
This is not the whole map. We track far more places across Sardinia than the two dozen below; these are the ones we would plan a trip around: the dedicated, wholly gluten-free kitchens first, then the gluten-free-serving options that round out each area, grouped by where you’ll actually be: Cagliari and the south, Alghero and the north-west, the Costa Smeralda coast, and the rest of the island. We publish evidence, not vibes. And plenty of the Sardinian table is naturally gluten-free to begin with: the roast and grilled meats (porceddu, the island’s suckling pig), seafood and bottarga, sheep’s-milk pecorino sardo, honey and almonds, and a glass of mirto to finish.
The trap to learn first
Pane carasau, the famous crisp Sardinian flatbread, is wheat. So are the island’s semolina classics: fregola, malloreddus (the little gnocchetti sardi), culurgiones (the stuffed pasta) and seadas (the fried cheese-and-honey dessert). Order the gluten-free versions from the dedicated bakeries and kitchens in this guide, and treat the bread basket and the pasta course as off-limits unless they are marked senza glutine.

Where to base yourself
Cagliari & the south: the deepest cluster and the main airport: two wholly gluten-free addresses (Man.gia, CELIAbbiamo), the Piga store for the pantry, and a run of careful kitchens across the old town.
Alghero & Sassari (north-west): Sassari holds the two dedicated counters (Gusto Senza Glutine, Caffetteria da Nicoletta); Alghero adds a seafront restaurant that runs its own gluten-free equipment.
Olbia & the Costa Smeralda (north-east): the ferry-and-airport gateway for the resort coast: a dedicated gelateria, a pizzeria with a written protocol, and a pantry shop for self-catering.
Stays & self-catering
We don’t yet hold a dedicated gluten-free stay in Sardinia we can name with confidence. A few resort groups advertise the AIC eating-out programme, but we haven’t stood in the breakfast room, so confirm it when you book.
The reliable model on the island is a room with a fridge plus a dedicated bakery or shop from this guide: CELIAbbiamo or Piga in Cagliari, Gusto Senza Glutine in Sassari, Bio Food in Olbia, Celiò in Oristano, Celiasì in Tortolì. Pharmacies (farmacie) carry certified staples too, and residents can use the regional coeliac voucher (buono celiachia).
The one sentence to say
Say it before ordering, every time, dedicated kitchen or not.
Sono celiaco/a. Non posso mangiare glutine e devo evitare anche la contaminazione con farina di grano, pane, pasta, pizza, briciole e olio di frittura condiviso.
I have coeliac disease. I cannot eat gluten, and I also need to avoid cross-contact with wheat flour, bread, pasta, pizza, crumbs and shared frying oil.
Two more that go a long way: La cucina è interamente senza glutine? (“Is the kitchen entirely gluten-free?”) and birra senza glutine when you want a beer.
Good to know
“Senza glutine” means ≤ 20 mg/kg (20 ppm), the EU and Codex threshold. A label that says it, means it.
Sardinian food is built on semolina. Pane carasau, fregola, malloreddus, culurgiones and seadas all carry wheat; the roast meats, seafood and pecorino are naturally gluten-free ground. More on this in whether coeliacs can eat bread in Italy.
AIC is a signal, not a guarantee, and it’s scarce here. AIC Sardegna has said only around 43 venues across the whole island are on its formal “Alimentazione Fuori Casa” register, so most “AIC” mentions in directories are inclusion rather than accreditation. Treat it as a good sign in a mixed kitchen, and still say the sentence.
Gelato is mostly naturally gluten-free, but the cones, the biscuit inclusions and a shared scoop are the trap: keep to a cup, ask for a fresh spoon, and check the flavour.
Getting around: the island is big: the three airports (Cagliari, Olbia, Alghero) and the ferry ports are far apart, and a car is usually needed beyond the cities. Pin your gluten-free stops before a drive, and carry bakery food for the beaches and the archaeological sites.
