Method
- Mix + rest: Combine the masa harina, salt and warm water into a soft dough β like play-dough, not sticky, not dry. Cover with a cloth and rest 20β30 minutes so the corn fully hydrates. If it cracks at the edges when pressed, work in a splash more water.
- Press + shape: Divide into ~8 balls. Press each between two sheets of parchment β a tortilla press is easiest, but the flat base of a pan works. Aim for an even ~2 mm round.
- Toast: Cook on a dry, hot pan (no oil) about 45β60 seconds a side, until lightly freckled and, on the best ones, puffed β the sign it is cooked through and will stay soft.
- Keep them soft: Stack cooked tortillas under a clean cloth or in a warmer as you go; the trapped steam keeps them pliable. Fill and serve.

β’ Masa harina is the whole ballgame. Corn is naturally gluten-free, but masa harina is milled in facilities that often also handle wheat β buy a bag labelled gluten-free. A generic unlabelled "corn flour" is the risk, not the corn.
β’ Not the same as cornflour/cornstarch (that is for thickening and will not make a tortilla).
β’ Fillings are where gluten sneaks back: pre-seasoned meats and taco-seasoning sachets can contain wheat or barley malt; bottled salsa and pickles occasionally use malt vinegar or modified wheat starch β read labels or make fresh.
