About the Japanese: our English master was written by a coeliac. The Japanese text (the “Eating gluten-free in Japan” page, the show-the-staff card page and the ask-the-kitchen questions) was checked line by line by three AI models (Gemini, GPT and Claude) against that master and corrected where needed: in September 2026, and again in October 2026 for two reworded questions and the punctuation of the Japan page. A native-speaker check is still pending, and those pages say so.
