Rome Β· gluten-free pizza

In Rome you can eat gluten-free pizza at 2 bakeries we rate as dedicated gluten-free kitchens (β˜…), both with pizza by the slice (Celiachiamo also makes round pizza), and at another 13 pizzerias and restaurants that describe their gluten-free pizza on their own websites (◐); 5 of them describe a separate kitchen, lab or department. A further 11 are listed by a directory or an online map listing, and we haven’t checked them yet.

How gluten-free pizza works in Rome

Rome has two pizzas: pizza al taglio, baked in trays and sold by weight in bakeries, and the round Roman pizza, thin and crisp, that pizzerias serve in the evening. Pizza by the slice is easiest at the dedicated bakeries, where everything is gluten-free and you order like everyone else. Round pizza mostly comes from pizzerias that also use wheat, and there what matters is how they keep it apart: some run a second kitchen, some a separate lab or department, some only a different dough.

Many Roman pizzerias point to AIC, the Italian coeliac association, whose eating-out programme (Alimentazione Fuori Casa) trains and inspects venues. If a place says it is in the AIC network, you can check it in AIC’s own search or app; if it only says “partner”, that is its own word.

When you book or order, ask three things. Does the gluten-free pizza have its own oven, or how do you bake it? Is the dough gluten-free (not farro, not “senza frumento”, not kamut: farro and kamut are wheats)? Do fried things, from supplΓ¬ to courgette flowers, go into a fryer used only for gluten-free? And say you have coeliac disease, not just that you avoid gluten.

Questions

Is gluten-free pizza in Rome safe for coeliacs?

It depends on the place, not the city. We rate New Food Gluten Free and Celiachiamo as dedicated gluten-free kitchens, and each card quotes what they say themselves. In pizzerias that also use wheat, what counts is the separation: Mama Eat, Mercato Hostaria, Triticum, La Tana dei Ricci and Il Secchio e l’Olivaro describe a separate kitchen, lab or department. Always say you have coeliac disease.

Where can I get gluten-free pizza by the slice in Rome?

At the seven New Food Gluten Free shops (central by the Ponte Sisto bridge, then Piazza Fiume, San Giovanni, Monteverde, Ponte Milvio, EUR and Casal Palocco), at Celiachiamo on Via Carlo Caneva and Viale dei Consoli, and at Starbene Senza Glutine on Via Seggiano.

Is farro or “senza frumento” pizza gluten-free?

No. Farro is a wheat, and so is kamut. A “senza frumento” (wheat-free) dough can contain other grains with gluten or be made next to wheat. Ask for a “senza glutine” dough and how it is made.

Can I eat gluten-free supplì and fried starters?

Only if they go through a fryer used just for gluten-free. Celiachiamo writes that with them β€œΓ¨ tutto senza glutine” (everything is gluten-free); Il Secchio e l’Olivaro says it makes its fried snacks in a separate lab. Elsewhere, ask about the fryer before you order.
