Words that help: bez lepku and bezlepkový (gluten-free), pšeničná mouka (wheat flour) and Mám celiakii (I have coeliac disease). Knedlíky (dumplings) are usually made from wheat bread or flour, smažený sýr (fried cheese) is breaded, and many sauces are thickened with flour, so ask before you order them anywhere that is not fully gluten-free. Several Czech gluten-free bakeries use deproteinised wheat starch (deproteinovaný pšeničný škrob), which EU law allows in gluten-free food at 20 mg/kg or less; if you avoid wheat starch, ask.

Before you go
