Gluten-Free Genoa: Dedicated Bakeries and Ligurian Food You Can Trust (2026)
Genoa is a city of focaccia and fresh pasta β Ligurian cooking is built on flour. So the good news lands nicely: coeliacs eat well here. Genoa has a small cluster of genuinely dedicated, 100% gluten-free bakeries, a proper gluten-free supermarket, and a food culture full of naturally gluten-free Ligurian dishes once you know what to order.

How gluten-free works in Italy
Italy follows the EU rule: anything labelled « senza glutine » must contain no more than 20 ppm of gluten (Regulation (EU) 828/2014). But Italy also treats coeliac disease as a medical condition β diagnosed coeliacs receive a state allowance for gluten-free food, and pharmacies (farmacie) stock certified gluten-free staples. The everyday signal to look for is AIC, the Associazione Italiana Celiachia: its network lists eateries whose staff are trained in cross-contact and follow documented gluten-free procedures. It isn’t a legal requirement, but it’s the clearest sign a mixed kitchen takes coeliacs seriously. Useful phrases:
- « Sono celiaco/celiaca, non posso mangiare glutine » β “I’m coeliac, I can’t eat gluten.”
- « È senza glutine? Come gestite la contaminazione? » β “Is it gluten-free? How do you handle cross-contamination?”

Beyond the bakeries above, Bassano Gluten Free is a dedicated gluten-free supermarket in Genoa with a wide range of certified products, including options for other intolerances β genuinely useful if you have a kitchen. Sitting down to eat β look for AIC-listed venues
For a proper Ligurian meal or a gluten-free pizza, your best guide in Genoa is the AIC network. Several Genoa pizzerias β among them Workshop (Pizza in Pala alla Romana) on Via Filippo Turati and Pizzeria Carignano on Via Rivoli β are reported to run a separate gluten-free kitchen with its own oven; a few trattorie keep a full separate gluten-free menu. Because setups vary and change, we’d point you to the free AIC app or the Atlas to find the current AIC-listed venue nearest you, then confirm the dedicated oven and prep when you sit down. Tell them clearly: « Sono celiaco/celiaca ».
Eating Ligurian, gluten-free
Liguria’s food is kinder to coeliacs than it first looks β with three things to know. Focaccia and farinata: the famous Genovese focaccia is wheat, so it’s out; but farinata, the golden chickpea-flour flatbread, is naturally gluten-free β just check it’s baked in a dedicated tin or oven, as some bakeries share equipment. Pesto is naturally gluten-free (basil, pine nuts, cheese, oil), so ask for it with gluten-free pasta or over potatoes and green beans the Ligurian way. And plenty of Ligurian seafood and vegetable dishes are gluten-free by nature β always confirm nothing is floured or fried in shared oil.
