Gluten-Free Cashew Burfi (Kaju Katli)

The classic Indian cashew-fudge diamonds — ground cashews, sugar, ghee and cardamom. Naturally gluten-free and grain-free; a festive sweet that is safe by nature. Contains cashew (and dairy unless made with oil).

Ingredients
  

  • 200 g cashew flour peeled cashews ground fine
  • 100 g sugar
  • 50 ml water
  • 1 tbsp ghee or butter/oil
  • 0.5 tsp cardamom powder
  • Pistachio slivers or edible silver leaf optional

Method
 

  1. Dissolve the sugar in the water and simmer until sticky (1-string stage).
  2. Stir in the cashew flour and ghee. Cook on low, stirring, until the mixture thickens into a soft dough.
  3. Spread onto a greased tray or parchment to about 5 mm thick, smooth flat, and cool slightly. Cut into diamonds and garnish with pistachio slivers or edible silver leaf. (Confirm set to your mixture.)

Coeliac notes
Naturally gluten-free and grain-free — cashews, sugar and ghee, no flour. One of the safest Indian sweets (unlike many others that use semolina or wheat).
Allergens: contains cashew (tree nut), plus pistachio if used; contains dairy (ghee) unless made with oil.
• Cardamom is naturally GF. When a label is unclear, treat it as "not for me".
